Greek Salad Recipe

Here at Williraye we love nothing more then eating organic, healthy, food. Ideally, if we could pick our greens fresh from the garden and eat our eggs straight from the chicken coop, we would be so happy! But unfortunately not every one has that opportunity, so we need to seek other ways of getting our organic foods.

Our favorite way to shop organic is by heading to our local co-op. We love supporting the community and this is a great way to do it. All the fruits and vegetables come straight from your local farmers and are always so fresh and crisp. We went here to get all the ingredients for a greek salad that we have been so excited to make! This summer we’re saying goodbye to the crockpots and hot dishes and saying hello to fresh greens. This salad was so good and easy to make that we had to share with you all!

Chickpea Greek Salad

Ingredients:

1 bunch of kale
1 can of chickpea
3/4 cup chopped onions
3/4 cup Mediterranean Feta Cheese
Salt & Pepper

Dressing:
1/2 cup olive oil
1 lemond, squeezed

Mix all the ingredients together and enjoy a delicious summer salad! We hope you love it as much as we did!
